  • 1 bell pepper
  • 1 carrot
  • 1 zucchini
  • 4 eggs
  • 1 cup heavy cream
  • 2 cloves garlic
  • 1 tsp thyme
  • salt
  • black pepper

    Preheat oven to 350°F and line a loaf pan with parchment.

    Blanch spinach in boiling water for 1 minute, squeeze dry, and chop. Dice bell pepper, carrot, and zucchini into small pieces.

    Whisk eggs with heavy cream, minced garlic, and thyme in a bowl. Season with salt and pepper.

    Mix vegetables into the cream mixture and pour into prepared loaf pan.

    Set loaf pan in a larger baking pan filled with 1 inch of hot water. Bake for 35 minutes until a knife inserted in the center comes out clean.

    Cool completely, then chill for at least 2 hours before slicing and serving at room temperature.
