- 3 cups arugula
- 4 oz goat cheese
- 2 tbsp balsamic vinegar
- 4 tbsp olive oil
- 1 shallot
- 1 tbsp honey

Preheat oven to 400°F. Wrap beets in foil and roast for 25 minutes until tender.
