  • 2 zucchini
  • 1 bell pepper
  • 1 onion
  • 3 tomatoes
  • 2 cups tomato sauce
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp basil
  • 1 tsp thyme

    Preheat oven to 375°F. Dice eggplant, zucchini, bell pepper, onion, and tomatoes into roughly 1-inch pieces.
