Ingredients (serves 4)

  • 8 chicken thighs
  • 1 onion
  • 4 cloves garlic
  • 1 cup canned tomatoes
  • 1 cup olives
  • 1 cup chicken stock
  • 2 tbsp olive oil
  • 1 tsp rosemary
  • 1 tsp thyme
  • salt and pepper

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken thighs with salt and pepper.

    Brown chicken thighs skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes. Remove and set aside.

    Dice onion and sauté in the pot for 3 minutes until soft. Mince garlic and add, cooking for 1 minute more.

    Pour in canned tomatoes and chicken stock, scraping up browned bits. Add olives, rosemary, and thyme.

    Return chicken to pot, cover, and simmer for 30 minutes until chicken is tender and cooked through.
