Chicken Marengo 🍗
Chicken simmered with tomatoes, mushrooms, and olives in a rich wine sauce, a Napoleonic celebration dish that's surprisingly simple.
Ingredients (serves 4)
- 4 chicken breasts
- 1 onion
- 4 cloves garlic
- 1 cup canned tomatoes
- 1 cup white wine
- 8 oz mushroom
- 1 cup olives
- 1 cup chicken stock
- 2 tbsp olive oil
- 1 tsp rosemary
- salt and pepper

Heat olive oil in a large pot over medium-high heat. Season chicken with salt and pepper, then brown for 4-5 minutes per side. Remove and set aside.

Dice onion and sauté in the pot for 3 minutes. Mince garlic and add, cooking for 1 minute.

Pour in white wine and chicken stock, scraping up browned bits. Add canned tomatoes and rosemary.
