Ingredients (serves 4)

  • 1 cup dry lentils
  • 1 cup quinoa
  • 2 medium carrots
  • 2 cups kale
  • 1 red bell pepper
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 cloves garlic
  • Salt and black pepper to taste

    Cook lentils in salted water for 25 minutes until tender but not mushy.

    Cook quinoa in salted water for 15 minutes until fluffy.

    Preheat oven to 400 F, cut carrots and bell pepper into bite-sized pieces, toss with 2 tbsp olive oil and salt.
