Apple Glazed Pork and Quinoa 🍎
Tender pork chops with a sweet apple cider glaze served alongside fluffy quinoa and sautéed kale.
Ingredients (serves 4)
- 4 pork chops
- 1.5 cups quinoa
- 3 cups kale
- 1 cup apple cider
- 2 tablespoons honey
- 1 tablespoon dijon mustard
- 1 tablespoon butter
- 2 garlic cloves
- 1 apple
- salt
- black pepper

Cook quinoa according to package directions.

Heat 1 tablespoon oil in a skillet over medium-high heat. Season pork chops with salt and pepper, cook until golden and internal temperature reaches 145°F, about 5-6 minutes per side.

Remove pork and set aside.

In the same skillet, whisk together apple cider, honey, and dijon mustard. Return pork to skillet and simmer in glaze for 2 minutes.

In another skillet, heat butter over medium heat. Sauté minced garlic for 30 seconds, add chopped kale and cook until wilted, about 4 minutes.
