Ingredients (serves 4)
- 8 oz egg noodles
- 1 lb chicken breast
- 1/2 cup peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 2 cloves garlic
- 1 teaspoon ground ginger
- 2 cups broccoli florets
- 1 red bell pepper
- 1/4 cup coconut milk

Cook noodles according to package directions. Drain and set aside.

Dice chicken breast into bite-sized pieces. Heat 1 tablespoon oil in a large skillet over medium-high heat.
