  • 1.5 cups white rice
  • 1 bell pepper
  • 1 onion
  • 1 cup frozen corn
  • 2.5 cups chicken stock
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt

    Heat olive oil in a large skillet over medium-high heat. Cook ground chicken for 6 minutes, breaking it apart, until no longer pink.
