Soy Ginger Salmon 🐟

Ingredients (serves 4)
- 1.5 lb salmon fillet
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tbsp sesame oil
- 2 tbsp ginger
- 4 cloves garlic
- 2 scallions
- 1 tbsp vegetable oil
- 1 lime

Pat salmon dry and season lightly with salt and pepper.

Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Place salmon skin-side down and cook for 5-6 minutes without moving. Flip and cook for 2-3 minutes until just cooked through. Remove to a plate.

Reduce heat to medium. Add minced garlic and ginger to the skillet and cook for 30 seconds.

Whisk together soy sauce, rice vinegar, brown sugar, and sesame oil. Pour into the skillet and simmer for 1 minute.

Return salmon to the skillet, spoon sauce over the top, and cook for 1 more minute.

Garnish with sliced scallions and a squeeze of fresh lime juice. Serve with steamed rice or bok choy.
