Smoky Split Pea Soup

Ingredients (serves 4)
- 2 tablespoons olive oil
- 1 onion
- 2 carrots
- 2 celery ribs
- 1 pound split peas
- 6 cups vegetable stock
- 2 bay leaves
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- salt and black pepper to taste

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 8 minutes until softened.

Add split peas, vegetable stock, bay leaves, paprika, and thyme. Bring to a boil.
