Ingredients (serves 4)

  • 1.25 lbs potatoes
  • 1.5 cups peas
  • 1 onion
  • 0.75 cup canned tomatoes
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 tsp garam masala
  • 0.5 tsp turmeric
  • 0.5 tsp cumin
  • 2 tbsp olive oil
  • Salt

    Dice potatoes into 0.75-inch cubes. Heat oil in a large pan over medium-high heat.

    Sauté diced onion until softened, about 4 minutes. Add minced garlic and ginger, cook 1 minute.

    Stir in garam masala, turmeric, and cumin, cook 1 minute. Add potatoes and canned tomatoes with 0.75 cup water.

    Bring to simmer, cover, and cook 15-18 minutes until potatoes are tender.
