Ingredients (serves 4)

  • 3 cups all-purpose flour
  • 3 medium potatoes
  • 1 onion
  • 2 green chilies
  • 2 tbsp ginger
  • 1 tsp cumin
  • 1 tsp garam masala
  • 0.5 cup ghee
  • 1 tsp salt
  • Water
  • Plain yogurt

    Boil potatoes until fork-tender, about 15 minutes. Peel and mash roughly. Finely chop onion, green chilies, and ginger.

    Mix mashed potatoes with onion, chilies, ginger, cumin, garam masala, and salt. Set filling aside.

    Make dough: mix flour with 0.5 tsp salt and 1 tbsp ghee. Add water gradually, kneading into a soft dough. Let rest 10 minutes.

    Divide dough into 8 balls. Flatten each, add 2 tbsp filling in center, fold edges around to seal, then flatten gently with palm.

    Heat a skillet over medium-high heat. Cook each paratha 2 minutes per side, brushing with ghee until golden and crispy.
