Lemon Herb Pork Chop Rice 🍋

- 4 pork chops
- 2 cups rice
- 1 lb green beans
- 2 lemons
- 4 tablespoons butter
- 3 garlic cloves
- 2 teaspoons rosemary
- 2 teaspoons thyme
- 1/2 cup chicken stock
- salt

Preheat oven to 400°F.

Toss green beans with 1 tablespoon butter, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.

Heat 2 tablespoons butter in a large skillet over medium-high heat. Season pork chops with rosemary, thyme, salt, and pepper. Cook until golden and internal temperature reaches 145°F, about 5-6 minutes per side.

Add lemon juice and zest to the skillet with pork, let simmer for 1 minute.

While pork cooks, heat 1 tablespoon butter in a saucepan. Toast rice for 2 minutes, add chicken stock, bring to boil, reduce heat, cover, and simmer for 15 minutes.
