Bacon & Egg Fried Rice
Crispy bacon, scrambled eggs, and fresh vegetables tossed through warm rice in a speedy one-pan dinner that beats takeout.
Ingredients (serves 3)
- 3 cups cooked rice
- 6 strips bacon
- 4 eggs
- 1 cup frozen mixed vegetables
- 2 cloves garlic
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 scallions
- Salt
- Black pepper

Cook bacon in a large skillet or wok over medium-high heat until crispy, about 6 minutes. Chop and set aside.

Add cooked rice to the skillet and break up any clumps, stirring frequently for 2 minutes.

Push rice to the side. Whisk eggs and scramble in the cleared space until cooked through, about 2 minutes.

Add frozen vegetables and minced garlic. Stir everything together and cook 2 minutes.
