Ingredients (serves 4)

  • 4 portobello mushrooms
  • 3 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 2 cloves garlic
  • 1 tsp dried thyme
  • 4 hamburger buns
  • 1 tomato
  • 2 cups arugula
  • 1/2 red onion
  • 1/2 tsp salt

Instructions

    Wipe the mushrooms clean and remove the stems. Whisk the balsamic, olive oil, minced garlic, thyme, and salt, then brush all over the caps.

    Let the mushrooms marinate 10 minutes, gill side up.
