Garlic Butter Cod with Greens 🐟
Flaky white cod fillets pan-seared in foaming garlic butter, finished with lemon and served over wilted garlicky spinach for a restaurant-quality weeknight meal.

- 1.25 lb cod fillets
- 4 cups fresh spinach
- 5 tablespoons butter
- 5 cloves garlic
- 1 lemon
- Salt and black pepper
- Olive oil

Pat cod dry with paper towels. Season both sides with salt and pepper.

Heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet over medium-high heat.

Cook cod 3-4 minutes per side until opaque and flakes easily. Transfer to a plate.

In the same skillet, melt remaining butter. Mince and add garlic, cook 30 seconds. Add spinach and toss until wilted, 2 minutes. Season with salt and pepper.
