  • 6 eggs
  • 1/2 lb deli ham
  • 1 bell pepper
  • 1/2 onion
  • 1 cup shredded cheddar
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper

    Dice the ham, bell pepper, and onion into small even pieces.

    Melt 1 tbsp butter in an 8-inch nonstick skillet over medium heat and cook the ham, pepper, and onion 4 minutes until the vegetables soften and the ham browns lightly. Transfer to a bowl.

    Whisk 3 eggs with a pinch of salt and pepper until fully blended.

    Melt half the remaining butter in the skillet over medium-low, pour in the eggs, and stir gently for 30 seconds, then let set into an even round.

    When the top is nearly set, scatter half the filling and half the cheddar over one side, fold the omelet over, and slide onto a plate.

    Repeat with remaining eggs, filling, and cheese for the second omelet and serve immediately.
