  • 3 cups cooked brown rice
  • 1 can chickpeas
  • 2 cups frozen mixed vegetables
  • 2 eggs
  • 3 cloves garlic
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 0.5 cup scallion
  • 1 tablespoon vegetable oil

    Heat vegetable oil in a wok or large skillet over high heat.

    Add minced garlic and cook for 30 seconds until fragrant.

    Add rice, breaking up clumps, and stir-fry for 2 minutes.

    Add drained chickpeas and frozen vegetables. Stir-fry for 3 minutes until heated through.
