Ingredients (serves 4)

  • 1.5 lbs chicken breast
  • 2 cups rice
  • 2 cups corn kernels
  • 1 red bell pepper
  • 2 limes
  • 3 tablespoons olive oil
  • 2 garlic cloves
  • 1/2 teaspoon cumin
  • cilantro
  • salt
  • black pepper

    Cook rice according to package directions.

    Heat 1 tablespoon oil in a large skillet over high heat. Season chicken breast with salt and pepper, cook until golden and internal temperature reaches 165°F, about 6-7 minutes per side.
