Ingredients (serves 4)

  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 can pinto beans
  • 1 cup cheddar cheese
  • 1 cup mozzarella
  • 1/2 onion
  • 2 cloves garlic
  • 1 teaspoon cumin
  • Salt and black pepper
  • Sour cream
  • Cilantro

    Preheat oven to 375°F. Drain and rinse pinto beans. Mash them with minced garlic, cumin, and salt.

    Spread 1/2 cup enchilada sauce on the bottom of a 9x13 baking dish.

    Dip each tortilla in remaining enchilada sauce. Layer three tortillas, then add bean mixture and a mix of cheddar and mozzarella.

    Repeat layers, ending with enchilada sauce and cheese on top.

    Bake 20 minutes until cheese melts and sauce bubbles at the edges.
