Ingredients (serves 6)
- 1.5 lbs ground beef
- 1 can canned tomatoes
- 1 cup frozen corn
- 1 onion
- 2 tbsp chili powder
- 1 tsp cumin
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1 cup milk
- 2 eggs
- 1.5 cups shredded cheddar cheese

Heat oven to 400°F. Brown the ground beef with the diced onion in an oven-safe 12-inch skillet over medium-high heat, about 7 minutes, and drain excess fat.

Stir in the chili powder, cumin, canned tomatoes, corn, and 1 teaspoon salt. Simmer until slightly thickened, about 8 minutes, then stir in 1 cup of cheddar.
