Ingredients (serves 4)

  • 1 lb ground beef
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp vegetable oil
  • 1 cup salsa
  • 1/2 cup sour cream

    Heat the oven to 425°F. Dice the onion and brown it with the ground beef in a skillet over medium-high heat, about 7 minutes, then drain the fat.

    Stir in the minced garlic, chili powder, cumin, 1 tsp salt, and 1/4 cup water, and simmer 2 minutes. Let cool slightly, then stir in the cheddar.

    Warm the tortillas in a damp paper towel in the microwave for 30 seconds so they roll without cracking.

    Spoon 3 tbsp filling down each tortilla, roll tightly, and place seam side down on an oiled baking sheet. Brush the tops with the remaining oil.
