Beef Tostadas 🌮
Crispy flat tortillas stacked with saucy beef, beans, cool sour cream, and crunchy lettuce, taco night with extra crunch.
Ingredients (serves 4)
- 1 lb ground beef
- 8 corn tortillas
- 1 can pinto beans
- 1 cup shredded cheddar cheese
- 2 cups lettuce
- 1 tomato
- 1/2 cup salsa
- 1/2 cup sour cream
- 2 tbsp chili powder
- 1 tsp cumin
- 2 tbsp vegetable oil

Heat the oven to 425°F. Brush the tortillas with the oil, spread on a baking sheet, and bake until golden and crisp, about 8 minutes, flipping once.

Brown the ground beef in a skillet over medium-high heat, about 6 minutes, and drain the fat.

Stir in the chili powder, cumin, 1 tsp salt, and 1/3 cup water, and simmer 2 minutes.

Mash the drained pinto beans in a small saucepan with a splash of water over low heat until spreadable.

Shred the lettuce and dice the tomato.
