Crispy Cheese Quesadillas 🫓
Golden, buttery tortillas hiding a molten pull-apart cheese center, the five-minute dinner that never gets old.
Ingredients (serves 4)
- 8 tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella
- 2 tbsp butter
- 1/2 cup salsa
- 1/2 cup sour cream

Toss the cheddar and mozzarella together in a bowl so every quesadilla gets both cheeses.

Heat a large skillet over medium heat and melt a small pat of butter.

Lay a tortilla in the pan, scatter about 3/4 cup of cheese over it, and top with a second tortilla.

Cook until the bottom is golden and crisp, about 2 minutes, then flip with a wide spatula and cook 2 minutes more.

Repeat with the remaining tortillas and cheese, adding butter between batches.
