Steak and Loaded Baked Cauliflower 🥩
A thick, juicy steak paired with creamy, cheesy baked cauliflower mash topped with bacon and chives.
Ingredients (serves 2)
- 2 ribeye steaks
- 1 large head cauliflower
- 4 tbsp butter
- 1 cup cheddar cheese
- 4 slices bacon
- 2 tbsp heavy cream
- 2 scallions
- Salt
- Black Pepper

Preheat oven to 375 °F.

Chop cauliflower into large chunks and boil in salted water for 8 minutes until very tender.

Meanwhile, pat steaks dry and season heavily with salt and pepper on both sides.

Heat a cast-iron skillet over high heat until smoking, then sear steaks 4 minutes per side for medium-rare.

Rest steaks on a plate while you finish the cauliflower.

Drain cauliflower and mash with butter, heavy cream, and half the cheese until creamy.
