Ingredients (serves 4)

  • 1 cup frozen spinach
  • 1 cup artichoke hearts
  • 4 oz cream cheese
  • 1 cup shredded mozzarella
  • 1/4 cup Parmesan
  • 8 slices sourdough
  • 2 cloves garlic
  • 3 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes

    Thaw the spinach and squeeze it very dry. Chop the artichoke hearts and mince the garlic.

    Warm 1 tbsp butter in a skillet over medium heat, cook the garlic 30 seconds, then stir in spinach, artichokes, cream cheese, Parmesan, salt, and red pepper flakes until creamy, about 3 minutes.

    Divide the filling among 4 bread slices, top each with mozzarella, and close the sandwiches.

    Butter the outsides and griddle over medium heat, 3 to 4 minutes per side, until golden and gooey inside.
