Ingredients (serves 6)

  • 1 lb ground beef
  • 1 onion
  • 2 carrots
  • 2 stalks celery
  • 4 cloves garlic
  • 28 oz crushed tomatoes
  • 4 cups beef stock
  • 15 oz white beans
  • 1 cup small pasta
  • 1 tsp italian seasoning
  • 2 tbsp olive oil
  • 1/4 cup grated parmesan

    Brown ground beef in olive oil in a large pot over medium-high, about 5 minutes, then remove and drain.

    Cook diced onion, carrot, and celery in the same pot 5 minutes until softening, then add minced garlic and italian seasoning for 1 minute.

    Return the beef with crushed tomatoes and beef stock and simmer 15 minutes.

    Add the pasta and drained white beans and simmer 10 minutes until the pasta is tender.

    Season with salt and pepper, thinning with stock if it gets too thick.

    Serve topped with parmesan and a drizzle of olive oil.
