Ingredients (serves 4)

  • 2 lb chicken thighs
  • 1 can crushed tomatoes
  • 1 bell pepper
  • 8 oz mushrooms
  • 1 onion
  • 4 cloves garlic
  • 0.5 cup white wine
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp dried basil
  • 0.5 tsp salt

    Heat the oven to 375°F. Season the chicken with salt and brown skin side down in olive oil in a large oven-safe pot over medium-high heat, about 5 minutes per side. Remove to a plate.

    Slice the onion, pepper, and mushrooms, and cook in the same pot until softened, about 5 minutes. Add the minced garlic for the last minute.

    Pour in the wine and scrape up the browned bits, then stir in the crushed tomatoes, oregano, and basil.

    Return the chicken to the pot, skin side up, cover, and bake at 375°F for 35 minutes.

    Uncover and bake 10 more minutes so the sauce thickens and the skin crisps.

    Serve over pasta, rice, or crusty bread with plenty of sauce.
