Ham and White Bean Soup 🍖
Smoky ham and creamy white beans in a rustic vegetable broth, the thrifty farmhouse soup that tastes like Sunday supper.
Ingredients (serves 6)
- 2 cups diced ham
- 2 tbsp olive oil
- 1 onion
- 3 carrots
- 3 stalks celery
- 4 cloves garlic
- 45 oz white beans
- 6 cups chicken stock
- 1 tsp dried thyme
- 2 bay leaves

Dice the onion, carrots, and celery. Heat the olive oil in a large pot over medium heat and cook the vegetables until softened, about 7 minutes.

Add minced garlic and thyme and cook 1 minute.

Stir in the ham and cook 2 minutes to bring out its smoky flavor.

Drain and rinse the beans and add them with the stock and bay leaves. Bring to a boil, then simmer 20 minutes.
