Ingredients (serves 5)

  • 3 tablespoons olive oil
  • 1 onion
  • 3 cloves garlic
  • 2 carrots
  • 2 celery stalks
  • 1 can diced tomatoes
  • 4 cups vegetable stock
  • 1 can white beans
  • 1 cup diced zucchini
  • 1 cup pasta
  • 2 cups fresh basil
  • Salt and black pepper to taste

    Heat 2 tablespoons olive oil in a large pot. Add onion and cook 4 minutes until soft.

    Add garlic, carrots, and celery. Cook for 3 minutes.
