Ingredients (serves 4)

  • 1 cup cooked lentils
  • 1/2 cup walnuts
  • 2 tbsp olive oil
  • 1 onion
  • 3 cloves garlic
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 8 corn tortillas
  • Salsa
  • Avocado
  • Cilantro
  • Lime

    Pulse walnuts in a food processor until they resemble ground meat. Cook lentils if not already cooked.

    Heat olive oil in a large skillet over medium heat. Dice onion and cook until soft, 4 minutes.

    Add minced garlic, chili powder, and cumin. Cook 1 minute until fragrant.

    Add walnut crumbles and lentils. Stir and cook for 5 minutes.

    Warm tortillas in a dry skillet, 30 seconds per side.
