  • 4 sweet potatoes
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 can black beans
  • 0.5 cup salsa
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 2 scallions

    Prick the sweet potatoes with a fork and bake directly on the rack at 400°F until completely tender, about 45 minutes.
