- 2 lemons
- 2 tsp black pepper
- 3 tbsp butter
- 2 tbsp olive oil
- 0.25 cup all-purpose flour
- 1 tsp garlic powder
- 0.5 cup chicken stock

Slice the chicken breasts in half horizontally to make thin cutlets. Zest one lemon and mix the zest with the flour, black pepper, garlic powder, and 1 teaspoon salt.

Dredge the cutlets in the seasoned flour, shaking off the excess.

Heat the olive oil and 1 tablespoon butter in a 12-inch skillet over medium-high heat. Cook the cutlets 3 minutes per side until golden and 165°F, then move to a plate.
