Ingredients (serves 4)

  • 1 can chickpeas
  • 1 cup couscous
  • 3/4 cup homemade or store-bought hummus
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 1/4 cup parsley
  • 1/4 cup cilantro
  • 1/4 cup flour
  • 2 tbsp olive oil
  • Vegetable oil for frying

    Prepare couscous according to package directions with vegetable broth.

    Drain chickpeas and pulse in a food processor with parsley, cilantro, 1 tbsp olive oil, and 1/4 tsp each of cumin, salt, and pepper until crumbly.
