Ingredients (serves 4)

  • 4 pork chops (1.5 inches thick)
  • 1/2 cup honey
  • 6 cloves garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh ginger
  • 2 tablespoons olive oil
  • 2 cups root vegetables
  • 1 tablespoon cornstarch

Instructions

    Preheat oven to 400°F. Toss root vegetables with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.

    Pat pork chops dry and season with salt and pepper.

    Heat remaining olive oil in a large skillet over medium-high heat. Sear pork chops for 4 minutes per side. Remove and set aside.

    Add garlic and ginger to the skillet. Cook for 30 seconds until fragrant. Stir in honey, soy sauce, and vinegar.

    Mix cornstarch with 1 tablespoon water and whisk into the glaze. Cook for 1 minute until slightly thickened.

    Return pork chops to the skillet and coat with glaze. Simmer for 2 minutes.
