Ginger Chicken Stir-Fry ✨
Chicken and vegetables in a ginger-forward sauce with snap and warmth, quick enough for a weeknight.
Ingredients (serves 4)
- 1.25 lb chicken breast
- 3 tablespoons ginger
- 3 cloves garlic
- 1 red bell pepper
- 2 cups broccoli florets
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon palm sugar
- 1 tablespoon rice vinegar
- scallions for garnish

Slice chicken into thin strips. Mince ginger and garlic. Slice bell pepper into strips.

Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook chicken strips until golden, about 6 minutes. Remove to a plate.

Add ginger and garlic to the skillet and cook for 20 seconds until fragrant.

Add bell pepper and broccoli, stir-frying for 3 minutes until tender-crisp.
