French Onion Chicken Skillet 🧅

- 4 chicken breast
- 2 onion
- 4 slices Swiss cheese
- 2 tbsp butter
- 2 tbsp olive oil
- 1 cup beef stock
- 2 cloves garlic
- 1 tsp dried thyme
- 1 tbsp all-purpose flour

Melt the butter in a 12-inch oven-safe skillet over medium heat. Add the thinly sliced onions with a pinch of salt and cook, stirring occasionally, for 20 minutes until deeply golden and caramelized. Move to a bowl.

Season the chicken with thyme, salt, and pepper. Add the olive oil to the skillet over medium-high heat and sear the chicken 5 minutes per side until golden and 160°F.
