  • 1/2 onion
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter

Instructions

    Dice ham, bell pepper, and onion into small pieces.

    Whisk eggs in a bowl with salt and pepper.

    Melt 1 tablespoon butter in an 8-inch nonstick skillet over medium heat. Pour in half the eggs and let sit for 30 seconds, then gently push eggs toward center as they set, tilting pan so uncooked egg flows to edges.

    When top is still moist but bottom is set, sprinkle half the ham, pepper, onion, and cheese on one half.

    Fold omelet in half and slide onto a plate. Repeat with remaining ingredients for second omelet.
