Ingredients (serves 4)

  • 2 blocks extra-firm tofu
  • 1 cup panko breadcrumbs
  • 3 cloves garlic
  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 1 lb spinach
  • 2 tbsp olive oil
  • 1 lemon
  • Salt and pepper

    Press tofu and slice into thin cutlets. Set up three shallow dishes: one with flour, one with water, one with panko.

    Coat each cutlet in flour, dip in water, then coat thoroughly in panko.

    Heat vegetable oil in a large skillet over medium-high heat. Fry cutlets 3-4 minutes per side until golden and crispy.
