Ingredients (serves 2)

  • 1 chicken breast
  • 4 slices sourdough
  • 3 tbsp pesto
  • 1 cup shredded mozzarella
  • 1 tomato
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper

    Slice the chicken breast in half horizontally into 2 thin cutlets and season with salt and pepper.

    Cook the cutlets in a skillet over medium-high heat, 3 to 4 minutes per side, until 165°F. Rest briefly and slice.

    Slice the tomato. Spread pesto on all 4 bread slices, then layer mozzarella, chicken, tomato, and more mozzarella.
