Ingredients (serves 4)

  • 12 oz egg noodles
  • 1.5 lbs chicken breast
  • 2 cups broccoli florets
  • 1 bell pepper
  • 4 scallions
  • 4 cloves garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons vegetable oil
  • 1/4 cup chicken stock

    Cook egg noodles according to package directions. Drain and toss with 1 teaspoon sesame oil to prevent sticking.

    Cut chicken breast into bite-sized pieces. Slice bell pepper into thin strips.

    Heat 1 tablespoon oil in a large skillet or wok over high heat. Cook chicken for 5-6 minutes until cooked through. Remove to a plate.

    Add remaining oil. Stir-fry broccoli and bell pepper for 3 minutes until tender-crisp.

    Add minced garlic and scallion whites. Cook for 30 seconds until fragrant.
