Ingredients (serves 4)

  • 1.5 lbs shrimp
  • 2 cups rice
  • 6 oz sausage
  • 1 bell pepper
  • 1 onion
  • 3 garlic cloves
  • 2 tablespoons paprika
  • 1 tablespoon cayenne
  • 1 teaspoon oregano
  • 1 cup chicken stock
  • 2 tablespoons butter
  • salt
  • black pepper

    Heat butter in a large skillet over medium-high heat. Cook diced sausage until browned, about 5 minutes. Remove and set aside.

    Add diced onion and bell pepper to the same skillet, cook until soft, about 4 minutes.

    Stir in minced garlic and cook for 1 minute until fragrant.

    Add rice and toast for 2 minutes, stirring constantly.

    Pour in chicken stock and season with paprika, cayenne, oregano, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.

    Return sausage to pan, add shrimp, and cook until shrimp are pink and cooked through, about 3 minutes. Fluff with a fork and serve.
