  • 2 tortillas
  • 2 cups shredded cheddar
  • 1 bell pepper
  • 1 onion
  • 2 tablespoons butter
  • Salt and black pepper

    Brown ground beef in a large skillet over medium-high heat, breaking it apart. Drain excess fat.

    Add diced bell pepper and onion to beef, cook 4 minutes until softened. Season with salt and pepper.

    Butter one side of a tortilla, place butter-side down in a clean skillet over medium heat.
