Beef Chimichangas 🌯
Golden fried burritos with a crackly shell giving way to spiced beef, beans, and melty cheese inside.
Ingredients (serves 4)
- 1 lb ground beef
- 1 onion
- 2 cloves garlic
- 1 can pinto beans
- 2 tbsp chili powder
- 1 tsp cumin
- 4 tortillas
- 1.5 cups shredded cheddar cheese
- 1 cup vegetable oil
- 1 cup salsa
- 1 cup sour cream

Dice the onion, mince the garlic, and brown them with the ground beef over medium high until no pink remains, about 8 minutes.

Drain the fat, then stir in the chili powder, cumin, and drained pinto beans, mashing the beans lightly, and cook 3 minutes.

Warm the tortillas until pliable, then spoon the filling down the center of each and top with cheese.
