Roasted Portobello Mushroom Steaks
Massive portobello caps marinated and grilled until meaty and charred, dripping with garlicky butter.
Ingredients (serves 4)
- 4 large portobello mushrooms
- 4 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 4 cloves garlic
- 1 teaspoon fresh thyme
- 1 tablespoon fresh parsley
- Salt and black pepper
- 0.5 cup parmesan shavings

Remove mushroom stems and scrape out dark gills with a spoon.

Whisk together balsamic, olive oil, minced garlic, thyme, salt, and pepper.

Brush marinade on both sides of mushrooms. Let sit for 10 minutes.

Heat a cast iron skillet or grill to medium-high. Cook mushrooms gill-side down for 4 minutes, then flip and cook 3 minutes more.
