Lamb and Orzo One Pot 🍚
Tender braised lamb with orzo pasta, tomatoes, and herbs cooked in one pot for an aromatic, deeply satisfying Mediterranean dinner.
Ingredients (serves 4)
- 1.5 lb lamb stew meat
- 1.5 cups orzo
- 1 can crushed tomatoes
- 1 onion
- 4 cloves garlic
- 3 cups beef stock
- 2 tablespoons olive oil
- 1 tablespoon oregano
- 1 tablespoon fresh thyme
- 1 bay leaf
- 1 lemon

Heat olive oil in a large pot over medium-high. Brown lamb pieces on all sides, about 8 minutes total. Transfer to a plate.

Dice onion and sauté with minced garlic for 2 minutes. Add crushed tomatoes and beef stock.

Return lamb to pot. Add oregano, thyme, and bay leaf. Bring to a simmer and cook for 30 minutes.
