Ingredients (serves 4)

  • 1.5 lb beef stew meat
  • 3 tbsp gochujang paste
  • 4 cups beef stock
  • 2 potatoes
  • 2 carrots
  • 1 onion
  • 4 cloves garlic
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 scallions

    Heat sesame oil in a large pot over medium-high heat. Brown beef in batches, 3 minutes per side. Remove and set aside.

    Add chopped onion and minced garlic to pot, cook 2 minutes.

    Stir in gochujang paste and cook 1 minute.

    Add beef stock and soy sauce. Return beef to pot and bring to a simmer.

    Cut potatoes and carrots into chunks, add to pot. Cover and simmer for 40 minutes until beef is tender.

    Taste and adjust seasoning with salt and black pepper.

    Ladle into bowls and garnish with sliced scallions.
