Ingredients (serves 4)

  • 3 lb beef short ribs
  • 1/2 cup soy sauce
  • 1/4 cup sesame oil
  • 3 tbsp brown sugar
  • 5 cloves garlic
  • 2 tbsp ground ginger
  • 1 pear
  • 1 onion
  • 2 carrots
  • 2 scallions

    Pat short ribs dry and season with salt and black pepper.

    Heat sesame oil in a large heavy pot over medium-high heat. Brown ribs on all sides in batches, 3 minutes per side. Remove and set aside.

    In the same pot, combine soy sauce, brown sugar, minced garlic, and ground ginger. Stir in 1.5 cups water.

    Peel and grate pear, add to braising liquid. Slice onion and carrots, add to pot.

    Return ribs to pot, cover, and simmer over low heat for 1 hour 15 minutes until meat is tender.

    Transfer ribs to a serving platter and strain braising liquid over the top.

    Garnish with sliced scallions and serve with steamed rice.
