Ingredients (serves 4)

  • 8 Corn Tortilla
  • 2 cans Black Beans or Pinto Beans
  • 1 Onion
  • 2 cups Cheddar Cheese shredded
  • 4 cups Lettuce shredded
  • 1 Tomato
  • 1/2 cup Sour Cream
  • Vegetable Oil
  • Salt and Cumin to taste

    Heat 1/2 inch vegetable oil in a shallow skillet to 350°F. Fry tortillas one at a time for 1-2 minutes per side until golden and crispy.

    Drain fried tortillas on paper towels. Season with salt immediately while warm.

    Dice onion and sauté in 1 tbsp oil over medium for 2 minutes. Add drained beans, mashing lightly, and 1/2 tsp cumin. Cook 5 minutes.

    Spread warm bean mixture on each crispy tortilla. Top with shredded cheddar, lettuce, diced tomato, and a dollop of sour cream.

    Serve immediately while tostada shells are still crisp and cheese is warm.
